Jonah Shaw, the founder of the Catskill Smokehouse, had his first encounter with the food world when he was four — in 1976 his mother started, and continues to operate, a whole foods coop that has become the area’s go-to source for local products.

Catskill Smokehouse grew out of Jonah’s  first upstate food endeavor, the Quarter Moon Café. Along with the “parent” company of the Smokehouse — Catskill Food Company, he also focuses on catering, consulting, and event planning, as well as the Taste of the Catskills Festival, held every year on Columbus Day weekend.

After graduating from Vassar College, Jonah lived in New York City, running his own graphic design company. It was there that he developed a greater love of food and cooking. So he took apprenticeships at the multi-star restaurants Berkley, Montrachet, and Nobu.

Jonah then ran several restaurants in Philadelphia before returning upstate.

Jonah grew up in the Catskill Mountains of upstate New York surrounded by home-grown food and family farms. The Catskills embrace the region of New York known as “America’s Bread Basket of the Revolution.” With clean air, mountain spring water, and rich farm land, the Catskills have produced artisanal dairy, an abundance of seasonal produce, and heritage livestock since the 1700s.
